I do this just to safe guide the seasoning but most of the time (post 2 weeks) I prefer to use an ice cube tray and freeze the seasoning and use at my leisure. The green herbs permeates down to the bones of the meats when it is properly marinated and only then, you can really attempt to make any of the other Trini -Caribbean dishes with success.
