I started the tasting with the base which is a blend of 5yo rum from Guyana(DDL) and 5yo rum from Barbados (a little unclear if it comes from WIRD or Foursquare, seen both data) imported to Jerez in Spain, it’s quite good and I can clearly recognize Demerara. Enjoyed with advantageously in a suitable glass, but also very used by professional bartenders in Div. While it may not be an immediate staple choice for my galley, I have filled a 10 ounce bottle of it to revisit at a later date. From nose to the medium long finish I recognize the sweet PX Sherry, raisins, vanilla, fruits and quite many other notes.

The Dos Maderas PX 5+5 rum is a high-quality alcoholic beverage made from a blend of rums from Barbados and Guyana. After 30 minutes in the glass almost all the whiskey/bourbon taste is gone, and the sherry flavour is fruiter than sweet. In fact, if I tasted this spirit blind, it might be hard for me to decide whether I was sampling a rum or a sherry. When the government finally wises up and allows the labeling of additives, what will the excuse of these dishonest brands be?The way it's created gives it some extra credit, I'm a sucker for a creative way of getting a complex taste together. To my understanding, they will only tell a consumer that their rum has additives if the consumer asks. First the rum spends 3 years in Palo Cortado sherry casks, and then the rum spends the final two years of aging in Pedro Ximénez sherry casks. The bottling serves up delightful notes of leather, sweet dried fruits, molasses, crumbling brown sugar, dark vanilla, chocolate, nutmeg, orange peel, walnuts, cloves, dark oak, toffee, and espresso. These certified rums, of the highest quality, are static aged for five years in casks that have previously been used to age Bourbon.

Firstly it is aged for 5 years in the Carribean in American oak cask then shipped over to Spain to be aged for a further 5 years in two different styles of sherry cask. I like what I am tasting (a lot actually), but my feeling is that the PX Sherry and the Rum battle for my attention rather than coexisting. I get light and short aromas of red grapes, red grape skin, grape-flavored cough syrup, raisins, cinnamon, figs, and vanilla.It tastes more like a super fortified wine due to the higher-than-usual ABV (if it were considered a wine). Experience has taught me that perhaps the most consistent thing for my palate to do, is to change it’s mind. Dos Maderas 5+5 PX begins its journey in the Caribbean, where we carry out a careful selection of rums from Guyana and Barbados.

My optimistic guess is they’re catering to the growing number of rum enthusiasts who recognize that aging in the tropics is different from aging elsewhere. This FDA reasoning, while sounding more like a stereotypical government shortcoming, sounds like a legitimate excuse for brands available in the US.While many of my favorite Rums have spent some time hanging out in used Sherry casks, they haven’t lost their primary identity as a RUM. This is probably the most fruit filled rum I have tasted thus far with flavours of raisins, prunes and dates pouring out onto the palate.

These rums are sent to Jerez to be aged for an additional three years in 20 year old Palo Cortado casks, and an additional two years in casks of 20 year old Pedro Ximénez casks. I finally tried this rum yesterday and think I will really enjoy it, it’s nice and smooth and it helps to have some notes to go along with it so that I can see how the tastes would be described. It's a delicious thick chewy full bodied mouthful with hints of a rich fruit cake, possibly a Christmas one.Then time for the 5+3, there the 5 stands for the aging of the base in the Caribbean and the 3 for 3 years of Solera aging in used Dos Cortados barrels in Jerez.
