The Hairy Bikers: Mums Know Best is a celebration of the very best of home cooking in Britain. Si and Dave have toured the nation hunting out Britain's lost family recipes - those forgotten gems and secret scribbles that have been handed down through the generations but are in danger of being lost forever. Heat 2 tablespoons of the oil in a large frying pan. Brown the oxtail over a medium heat for about 10 minutes, turning every now and then, until dark brown all over. You may need to add extra oil if the pan looks dry at any point during the browning step. Put the browned oxtail into a flameproof casserole dish. (You may need to do this in batches.) The bikers are on the hunt for family classics - those recipes which are a firm favourite in every household and are requested time and again by every member of the family. Their celebration of family food ends up (as all good celebrations do) in a field filled with nearly 200 mums tasting and sharing each others' family-favourite cooking.

It includes Si and Dave's personal family recipes as well as their favourite recipes that they discover through the mums they meet and the recipe fairs they hold. If your favourite meals are made using the tried and tested method of other home cooks, you'll be pleasantly surprised by this diverse selection of recipes. Nothing connects you to home like the smell of the food your mum used to cook, so the Hairy Bikers visit three mums to share their unique taste of home. Wash the oxtail pieces and pat dry with kitchen paper. Trim off as much excess fat as possible. Put the flour in a freezer bag and season well with salt and pepper. Put half the oxtail pieces into the seasoned flour, toss well to coat then set aside on a plate. Repeat with the remaining oxtail pieces. Spoon the mash over the mince mixture in the ovenproof dish, working towards the middle from the outside. Smooth with a palette knife. When all the mince is covered with mash, create patterns on the surface using a fork.

Lisa is playing culinary detective, enlisting the help of the Bikers to uncover the mysteries of a family recipe book that hasn't been cooked with for years.
